The display on the phone is incredible for watching video on its own, but Samsung has added in a Video Enhancer mode which boosts the display’s brightness, and colors to deliver an even better experience. You can turn on the Video Enhancer mode in Settings > Advanced Features > Video Enhancer. From there you can then choose which applications the Video Enhancer mode should apply to.
